Elderberries have a rich, deep purple color and a slightly tart flavor that makes a unique and healthy ice cream. Important: Elderberries should always be cooked before eating, as raw berries can cause stomach upset.
Ingredients
- 1 cup cooked elderberries (fresh or dried)
- ¾ cup sugar or honey
- 2 cups heavy cream
- 1 cup milk
- 3 egg yolks
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional for freshness)
Step-by-Step Method
1. Cook the Elderberries
- Add elderberries and ½ cup water to a small pot.
- Simmer for 10–15 minutes until soft.
- Mash and strain to remove seeds if desired.
- Let the puree cool.
- In a bowl whisk egg yolks + sugar until pale.
- Heat milk and cream in a pan (do not boil).
- Slowly pour the warm milk into the egg mixture while whisking.
- Return mixture to the pan and cook on low heat, stirring constantly until it thickens (like light custard).
- Mix in elderberry puree, vanilla, and lemon juice.
- Refrigerate mixture for 3–4 hours until very cold.
- Pour into an ice cream maker and churn according to instructions.
- Or freeze in a container and stir every 30 minutes for 3–4 hours to prevent ice crystals.

- 🌿 Elderberry + lavender for floral flavor
- 🍋 Elderberry lemon ice cream for tangy taste
- 🍦 Add blackberries or blueberries for mixed berry ice cream
- 1 cup elderberry puree
- 2 cups whipped cream
- 1 can sweetened condensed milk
✅ Tip: Elderberry ice cream pairs well with Kashmiri walnuts, saffron, pecan, hazel or almond flakes for a premium herbal dessert.
