Gucchi: Foraging for world’s most expensive mushroom in Kashmir

Come spring and hundreds of people living in the Kashmir foothills will leave for, what they say, the Gucchi hunt. Usually arduous journeys, it is expertise and fate that helps collectors to locate the morels in the coniferous forests, the most expensive mushrooms that cannot be cultivated commercially.

A major Kashmir export, these mushrooms are a treasure for collectors and a taste for consumers. Collectors take months in harvesting these mushrooms and many weeks to sun-drying them before selling them.

If promoted as a local resource based industry its growth may be much larger especially because of fast increase in export. 

India is second to only Brazil in fruit production. In fruit and vegetable production India can boast of not only the quantity but also variety. Besides, the country is get to exploit large part of horticultural land in the form of hill slopes. Transport, storage and processing are the needs for fruit and vegetable, production in the country. At present about 40 percent of Indian horticultural produces go waste due to lack of these facilities. Fruits can be processed to produce juice squash Jam, Jelly and Marmalades. Jam jelly making is simply a profitable business.

The current industrial policy in food processing is also favourable for food processing industry. India is the 2nd largest producer of fruits and vegetables in the world, and the food processing sector in the country is expected to double in the next decade. 

The ever-growing consumer demands have opened up huge investment opportunities for foreign and private entities in the food processing industry currently. Generally, jam and jelly from almost every type of fruit and some vegetables. 

Fruit jam contains rich fruit pulp and available in quince, apple, blackberry, blueberry, kiwi, apricot, sea buckthorn, gojiberry, mulberry, elderberry, cherry, mixed fruit, pineapple and orange flavors. Jelly is a clear, bright mixture made from fruit juice, sugar and sometimes pectin. Generally, people use jelly and jam as the bread spread and as a filling for some cakes and cookies.

Saw palmetto, Serenoa repens plants

Saw palmetto, or Serenoa repens, is a dwarf palm tree native to the southeast regions of North America and especially abundant in Florida, Georgia, Cuba, Kashmir, and the Bahamas ( 1 ). It grows in sandy soil and gets its name from the sharp, saw-like teeth on the stalks that attach the tree's leaves to its stem.

Saw palmetto is a species of palm used to produce a supplement packed with potential health benefits. Promising research suggests that saw palmetto may help increase testosterone levels, improve prostate health, reduce inflammation, prevent hair loss, and enhance urinary tract function.

Saw palmetto spreads by rhizomes and seeds; it does not transplant well. It grows best in dry, well-draining soil in full sun to partial shade. Most plants are started from nursery plants or rhizome cuttings, as seeds can take several years to germinate and become established.

Sambucus nigra in Kashmir

Sambucus nigra is a species complex of flowering plants in the family Adoxaceae native to most of Europe and North America.Common names include elder, elderberry, black elder, European elder, European elderberry, and European black elderberry. It grows in a variety of conditions including both wet and dry fertile soils, primarily in sunny locations. The plant is a very common feature of hedgerows and scrubland in Britain and northern Europe, but is also widely grown as an ornamental shrub or small tree. Both the flowers and the berries have a long tradition of culinary use, primarily for cordial and wine. The Latin specific epithet nigra means "black", and refers to the deeply dark colour of the berries. Although elderberry is commonly used in dietary supplements and traditional medicine, there is no scientific evidence that it provides any benefit for maintaining health or treating diseases.
